KJ’s Lousiana Hot Sauce might surprise you. People who are not big fans of Louisiana-style hot sauce have these types of comments:

“I usually don’t care for Louisiana hot sauce because it doesn’t have much flavor, but yours tastes SO GOOD!”

Recently we had our kids over and broke open all our bottles for them to taste on chips. EVEN THOSE kids who thought they’d like all the other sauces better ended up asking to take one our Louisiana bottles home! It’s just that good people!

Look up a description of “Louisiana hot sauce” on the web and you typically will find that most commercial Louisiana hot sauces simply use peppers like tabasco and cayenne with salt and vinegar, which means simply that they deliver heat, but well, unfortunately not much FLAVOR.

So you might ask – why DOES KJ’s Louisiana hot sauce taste so good?

Just like our other hot sauces, we impart our sauces with additional vegetables and spices, and, after numerous taste tests, by request, we actually bump up the heat in our Louisiana sauce with fiery, fruity habanero peppers.

And like our other sauces, we ferment our chilies first to give even MORE flavor. This ferment process does amazing things to the chilies and vegetables. Remember that saying that “all good things take time”? Yep, it’s true when it comes to hot sauce! Typically, the longer the ferment, the better it tastes. So, add all this added love, ingredients and percolating time up, and you’ll understand why we get the glowing comments about our KJ’s Louisiana Hot Sauce!

What do you mean?

The beautiful colors in KJ’s Hot Sauces are as pretty as a rainbow, however, they don’t just happen, it takes some science and a careful culinary palette to make them taste good AND be beautiful to the eye, so let’s talk about creating color in hot sauces shall we?

For instance, if you processed some red hot pepper like a habanero, or Fresno with say, a green serrano pepper, you’d end up with good flavor, but with a bottle of something that looked a little like….well, MUD. Creating color in hot sauces should not look like mud people.

Some Examples of Creating Color in Hot Sauces

We all know we feast FIRST with our eyes right? So, at KJ’s, it took us a moment (or two) to figure out combinations of peppers that work and look pretty. For instance our Pineapple Habanero hot sauce is the prettiest darn yellow imaginable because we primarily use all yellow peppers with a touch of orange habanero and of course, yellow pineapple when we blend it.

Our Chipotle Hot Sauce is a blend of red peppers and dried chiles and spices that give it that smoky darker red color.

And our Charred Green hot sauce has that darkened verde green color that comes by blending all green peppers with blackened charred green peppers fresh off the grill, then adding and a splash of lime.

Our Mango Habanero hot sauce was the hardest. Getting that almost neon orange hue took a few times of mixing yellows and reds to get so lovely.

KJ’s Pineapple Habanero Hot Sauce

KJ’s Pineapple Habanero Hot Sauce is one of our favorites featuring a tropical flare. It is perfectly blended and balanced with a nice hint of sweetness from pineapple, but also a nice kick from the habanero peppers. This sauce is on our medium-hot scale and is hot enough to make you love it, but not hot enough to be intolerable to those who don’t like scorching mind-numbing heat!

As always, we add other vegetable flavors, like garlic to round out this sauce and it is delicious on seafood tacos, pizza and just about anything else you can think of to sprinkle it on! I mean, why would you use the same-old-sauces you can get at the store all of the time on all different kinds of food when you can choose to try one with a different flare, like PINEAPPLE?!

Pineapple Habanero Hot Sauce

We keep one of each of our sauces in the door shelf of our refrigerator and love having a choice for whatever mood strikes us at any given meal. We find ourselves reaching for this one over and over where any pork meal is being offered. It’s really fantastic on Hawaiian pizza with ham and pineapple but it’s equally wonderful drizzled on pork loin or pork chops! We’ve even found it wonderful dotted over our ham and cheese omelets or even sprinkled over hollandaise sauce on eggs benedict prepared with Canadian ham or bacon!

It’s also delicious on any type of shrimp dish (try this seafood and pineapple fried rice recipe!).
